Weekly meal ideas

This weeks meal plan. Having spent £65 the last 2 weeks running in Tesco, have made a list of everything i have in cupboards, fridge and freezer and have chosen meal ideas that use up what we have with only a few things needed from Tescos. Fingers crossed for a cheap weeks shopping.

Monday
L - Broccoli and blue cheese soup and Mediterranean veg frittata
D - Tuna and pasta bake
P - Rice pudding

Tuesday
L - Jacket potato with beans and cheese
D - Quorn or chicken Korma and rice
P - Lemon meringue 'pie'

Wednesday
L - Ham, egg and chips
D - Goats cheese and onion filo tart and veggies
P - Jelly and scone

Thursday
L - Spaghetti carbonarra
D - Veg stew
P - Fruit and meringue

Friday
L - Soup and potato wedges
D - Sausage stew and couscous
P - French toast and fruit

Saturday
L - Chickpea dhal and rice
D - Stir fry with Quorn steak strips or chicken and noodles and rice
P - Syn free pancakes and jam and cream ( didn't have last week in the ned)

Sunday
L - Lentil dhal
D - Burgers and wedges and veg
P - Oranges poached in red wine
 
Baked Apple - I just cored a cooking apple and but a desert spoon of mince meat in the hole, put in slow cooker with a dash of apple juice in the bottom and put on LOW for 3 hrs. tasted good. might use a eating apple next time as with no added sugar was a bit tart!
I refused to syn the apple as only eating the 1. and the apple juice wasnt eaten, could just use water to make some moisture in the slow cooker.
( i nicked the idea from a Slow cooker book i was looking through in Waterstones, waiting for my bookworm friend to finishe looking for her books ( half a hour! - i copied a fish recipe out too, which will try one week)

Well the goats cheese tart, i am making up as i go along....lol using 1/2 sheet filo pastry i reckon - 3syns, 1 or 2 goats cheese babybel( 3.5syns each - although i didnt think they were that high....lol I'm below target now, and hubby never has enough milk or cheese so it wont bother us), and the syn free onion marmalade. will let you know how they go.
( i used the goats cheese babybel on my rosti pizza last night, and was very yummy.
 
Thanks Honey. I have not seen the goats cheese babybels in the shops. I must pay attention! I had goats cheese on my pizza and counted it as a HeB. I love it.

Now I think of it, I don't think I have had pastry for 3 months :eek: Must give this a go.

The baked apple with mincemeat sounds lovely and Christmassy :)
 
Bit late with adding this weeks meal plan, has been a very hectic weekend!!

But here is this weeks plan

MON - sort of flexi come EE ish day - Is our 2nd Wedding Anniversary today
L - Ainsley Harriot Lentil dhal
D - Cant afford to go out for a meal, so home made meal it is
Starter - crab cakes with stir fry pak choi
Main -chinese 5 spice marinated salmon/haddock with stir fry veggies
Pud - proper chocolate mousse with cherries and squirty cream :)
+ bottle of Asti :)

TUE
L - Ham, egg and chips
D - Chunky minestrone and cheese
P - fruit and meringue

WED
L - left overs or soup
D - Lasagne
P - jelly

THURS
L - Frittata and wedges
D - Chili and rice
P - not sure...lol

FRI
L - SW fry up
D - 3 colour carbonarra
P - French toast

SAT
L - Chick pea dhal and rice
D - Rosti Pizza and wedges
P - Fruit and meringue

SUN
L - Soup
D - SW KFC
P - crumble pot

P - Jelly and cream

Thursday
L - Ham egg and chips
D - Stew

L - Frittata and wedges
D - Meat balls and spaghetti
P - French toast

Saturday
L - Chick pea dhal and rice
D - Tuna and pasta bake
P - Rice pudding

Sunday
L - SW fry up
D - Roast dinner

D - Rustic minestrone
P - fruit and yogurt

Friday
L -Quorn ham, egg and chips
D -Ragu parpadelle
P -french toast

Saturday
L - Chickpea dhal and rice
D - Balsamic chicken and potato and veggies ( from new magazine)
P - Rice pudding

Sunday
L - SW fry up
D - Leek and pea pasta
P - jelly
 
I assume the balsamic chicken will be with quorn? I was thinking about trying that myself.

P - Jelly and Ice cream

D - Chilli con carne and rice
P - Fruit and meringue

L - Spaghetti carbonrra
D - Chinese 5 spice fish with Stir fry
P - chocolate log

Thurs
L - Sausage and mash and onion gravy
D - Veg stew
P - Chocolate mousse

Fri
L - Quorn ham, egg and chips
D - Tuna pasta bake
P - Pannacotta

Sat

P - lemon sponge (experiment recipe!! lol)

L - Jacket potato beans and cheese
D - coconut king prawns, red lentil pancakes -probably count as food abuse but gonna give them a go anyway. and other veg dishes from my indian cook book

What is sweet potato melt? That sounds nice!

was a sweet potato baked in the oven. then i made caramelised onion ( could use the syn free onion marmalade) and then cut open the sweet potato, topped with the onion mix and then HEA of cheese of your choice over the top and grilled to melt and brown cheese.
was really yum and a nice change from normal jacket spud
