its handy to have them all within one thread. I'm on my iPad at the moment but I find it annoying to use when I want to type things up quick & add photos so I'm going on hubby's computer for abit now so I can add more :)
I can't wait to see everyone else's recipes too. It's always nice to get ideas from each other xxx
 
I made this the other night for the OH and I. It was quite frankly AMAZING.

I added 1/2 can of baked beans and 2 beef OXO cubes and so was actually 6pp per person (serves 4) (I had a slightly larger portion than a 1/4 and counted 9pp) I had some for my lunch the next day too and it was lush! :)

WW Web Recipe

Beef Enchilada Bake
[h=2]Ingredients[/h]Calorie controlled cooking spray
1 onion, finely chopped
1 clove garlic, crushed
1 red chilli, deseeded and chopped
1 tsp each ground cumin & coriander
250g (8½oz) extra lean minced beef
1 red, 1 yellow and 1 green pepper,
deseeded and chopped
400g (14oz) can chopped tomatoes
3 Weight Watchers Wraps
75g (2¾oz) Weight Watchers Reduced Fat Grated Mature Cheese

[h=2]Method[/h]Mist a pan with cooking spray and add the onion.
Fry, stirring, for 5 minutes.
Add the garlic, chilli and spices.
Fry for 1 minute. Stir in the mince and fry, stirring, for 2-3 minutes.
Add the peppers and cook for 5 minutes.
Add the tomatoes and ½ can water.
Cover and simmer for 20 minutes, stirring.
Season to taste.
Mist an ovenproof dish with cooking spray and place 1 Weight Watchers Wraps in the base of it.
Spoon 1/3 of the mince over the top of the wrap.
Cover with another Weight Watchers Wraps and repeat to use up all the Weight Watchers Wraps and the chilli sauce, finishing with a layer of sauce.
Sprinkle over the Weight Watchers Reduced Fat Grated Mature Cheese.
Cool and double wrap the assembled bake in clingfilm.
Freeze for up to 3 months.
Bake from frozen for 30 minutes at gas mark 4/180°C/fan oven 160°C.
Serve between 4.
 
Mmmmm I just made frozen yoghurt dots. Lush! I mixed a large tub of fat free yoghurt with a white chocolate options and some sweetener. Dotted them on to a baking sheet on a tray and put in the freezer for an hour.

1pp and shared them with my other half, they were lovely :)))) x x

Bovril Soaked Roasties

Preheat the oven to gas Mark 8.
Par boil the potatoes in a pan of hot water for 10-15 minutes on a medium heat. I add a vegetable stock cube & salt & pepper to the water for extra flavour.
Drain the potatoes then add them to a ovenproof dish.
Add 2 Bovril beef cubes to a jug & add 200ml of hot water stirring well. Pour the Bovril around the potatoes but not directly over them. Spray the tops of the potatoes with Frylight & oven cook for 45 minutes or until the roasties are nice & golden & the Bovril has soaked up.
There you have delicious beefy flavoured crispy roasties with a beautiful fluffy potato inside

Tonight's Cottage Pie Dinner
6 ProPoints if counting & 1 ProPoints on F&H.

Made using 70g 5% fat minced beef (2pp), onions, mushrooms, peppers & carrots. Add some tinned tomatoes & beef stock, splash of Lea & Perrins & simmer until the sauce thickens. Cook 125g raw potatoes (3pp) in a pan of vegetable stock & add a teaspoon of mustard. Once cooked mash well & top on the mince. Add 15g of low fat cheddar (1pp) & place in oven until bubbling.
Serve with vegetables of your choice. Delicious.

Ham & Egg Cups free on F&H or 5 ProPoints for all 6 cups if counting.
2 slices of co-op breaded ham (1pp) cut into circles (I used the bottom of a tin to make these lol).
Spray muffin tray with frylight.
2 eggs (4) beaten.
Then add whatever u fancy to the egg mix. I've got red onion & mushrooms in mine. Top with sliced tomatoes.
Cook for 15-20 minutes on gas mark 6 xxx

I've made these before & they r lovely & so simple. I use bacon medallions tho, gives lovely flavour. Not made 4 a wile tho, mite do this 4 Brekkie the morn :)

♥ Easy Tomato Soup ♥

Serves 4.
Free on F&H.

2 cans tinned tomatoes
1 can Baked Beans
1 small can carrots
2 small or 1 large pickled onion
Sweetener to taste

Blend them all together until smooth and then simmer to warm through. Tastes just like Heinz tomato soup.
I sometimes add chillies to it for an extra spicy taste too.

Yumiii would it be nice as a yogurt or do u have to put in freezer are they 1point for all x
