Without a kitchen...

I'm having a new kitchen/major remodelling done, So far I've been so off plan I could kick myself!

I've got a microwave and a slow cooker, and about a tray sized bit of table top! but I leave for Work at 6.45 and don't have time to faff with the slow cooker, and anyway my 'boys' only like beef stew cooked in it and I'll admit I'm not up to speed on all it can do tbh!
so far we had Italian chicken casserole that was horrible, beef stew that didn't cook as someone unplugged the SC whilst I was at work ) I'd chopped everything and put it in a box in the fridge.
Last night was JPs but son isn't too keen on potatoes done in micro!
I'm stuck for tonight now!
 
erm...chilli? that can be done in SC served with micro rice ...but like u say u are limited for timebefore wwork...ill have a think

I should have said; boy child won't eat chilli and only Korma curry, man child eats nothing but chocolate and oven chips (we'll ignore him)
 
you can do cous cous with only a kettle.
baked potato and beans in the micro.
you can cook quiche in the micro, the top just wont brown.

trying to think what else you can do, loads im sure....
 
Hello :)

I always microwave chopped onions, peppers and mushrooms. Then I add it to things like cous cous. You could get bacon and microwave it for 2 mins, uncle bens bagged rice, eggs.

In my slow cooker I put all sorts. Sausages in chopped tomatoes, veg and stock, soup.

Hmmmm I'm sure I do more things than that lol
 
Thanks guys just see a recipe for breakfast casserole so might do that tonight.

Son wanted Korma tonight but I don't fancy eating at midnight!!!!
 
I cook a gammon joint or whole chicken in mine. Stick the joint in, dribble of water and leave it. Get some of those ping packs of vegetables or a bag of salad and bobs your uncle!

Sausage casserole is good too - I use one of the sachets (about 6 syns) tinned toms, carrots etc and leave it to do it's stuff.

You can get slow cooker casserole sachets which thicken better than the normal ones, slow cooker casseroles tend to be watery sometimes.
 
No tips for you but ((big hugs)) Must be a nightmare having that work done and trying to cook meals for a family. Hope it's all over and done with soon. Good luck!

Go out & buy one of those small 1ring cookers with a replaceable gas cylinder, they are great, I used on for a 5 hour pancake cooking session and it preformed faultless, you can then store it away for trips out or emergencies, then you can make this Korma recipe!.............

Pete’s Chicken Korma

Serves 2

Ingredients

1 large onion, finely chopped (s) (sff)
1cm piece fresh root ginger, peeled & finely chopped
1 cinnamon stick
1/2tsp turmeric
1/2tsp ground cumin
1/2tsp ground coriander
1/2tsp Chinese 5 spice
1tbsp cornflower mixed with 1tbsp of water (1.5 syns)
1tbsp Sweetener
2 bay leaves
3 cloves garlic, finely chopped (sff)
4 tablespoons passata (s) (sff)
*25g flaked almonds (1 Heb on green per person)
100g Basmati rice, cooked as per packet instructions (ff)
175g fat free natural yogurt (ff)
230g skinless chicken breasts (ff) (1Heb on green per person)
250ml chicken stock
* leave out or syn at 25g=7.5 syns if not on green

Method

In a dry frying pan cook the chicken until browned, remove and set aside.
Spray the frying pan with Fry Light; cook the onions, ginger, cinnamon stick & bay leaves for 5 mins until the onions are soft.
Add the turmeric, cumin, coriander & 5 spice, mix well.
Return the chicken, chicken stock, passata & sweetener; simmer for 20 mins until the chicken is fully cooked.
Reduce the heat Add the yoghurt mixed with the cornflower and mix, cook for 5 mins, remove from the heat, remove the bay leaves & cinnamon stick, sprinkle the almonds on top, and serve with basmati rice.

Thanks Pete! I've been using my no cooking time to write down recipes.... Still on page one of your diary lol!
Why didn't I think of a calor gas ring? Surprising as when i was a kid we had a two burner which was our only cooker when I was 11/12 til I was 15 it's what I learned to cook on!
