19pt vegetarian food diary - help and suggestions welcome

    Right I am starting this food diary in the hope that I will get help and support in my food choices and also hoping it might help others

    breakfast
    nimble (3) lurpak lighter (3tsp) Marmite points 4

    Lunch
    shape lasting satisfaction yog
    apple small banana and packet of walkers baked crisps
    points 4

    Dinner
    spaghetti (80g dried) 4
    bol sauce 1/2 point
    35g leskol 1.5point
    points 6

    TOTAL POINTS FOR TODAY 14

    recipe for spagbol veggie sauce
    Chuck all the following in a slow cooker it makes 12 good portions and is 1/2 a point per portion
    2 bags quorn mince (600g)
    4 med onions finely dices and dry fried in frylight
    454g mushrooms finely diced and dry fried in frylight
    3 tins chopped tomatoes
    6 cloves of crushed garlic
    1 teaspoon dried mustard
    splash of balsamic
    2 teaspoons of dried Italian herb mix
    1 bottle passatta

    this fills my oval slow cooker and I cook it for at least 4 hours on high - it tastes even better on day two :)

    freezes well and makes a great sauce for lasagne too

    Well I was deliberately under on points yesterday as I was supposed to be going out for lunch today (for my birthday) but daughter too ill to join us so I have postponed

    so food for today is
    breakfast
    3 x nimble 2pts
    lurpak lighter 2pts
    with marmite
    4pts

    Lunch
    ryvita minis 1.5pts
    low fat houmous 2pts
    cucumber
    3.5pts

    Dinner
    as last night
    spag bol with cheese
    6pts

    Snacks
    WW black forest bar 1.5
    total so far today 15 pts
    will most likely add a weigh watchers bar and an apple might even have some crisps tonight - will update later

    Recipe for pasta salad (2 servings) 4pts per serving
    120g pasta any shape cooked and chilled
    1tablespoon cooked peas (for protein)
    1 tablespoon cooked sweetcorn

    chopped tomatoes cucumber spring onions peppers and any other free veg of choice

    dressing
    2tablespoons of fat free greek yog
    and any fat free dressing (I used honey and mustard)

    well today my eating has not been healthy at all - but I am sure I will survive

    this morning I went without breakfast but had some chips mid morning
    4pts or maybe 6 as they were unweighed I am a little unsure

    Late lunch when we got back
    lemon and coriander houmous 3pts
    walkers squares 1.5pts
    carrot and cucumber crudités
    4.5

    tesco light choices tomato and mozzarella pasta bake 6.5pts

    still on 19 pts but been totally off track - hoping this will help

    total for day 11 points - far too few - surprising what you can eat if you plan carefully

    I KNOW I am well under for the day - this WONT happen very often

    total 15 pts so 4 left for snacks if I need them this evening - will try to stay in control of the munchies

    hey aaleigha, just a quick Q, which sugar free lollies is it your having? ive been looking for some low point ones for a sugar fix, currently on with cherry tic tacs but can see me getting bored fast!
