mightymonocle's up and coming food log

Yup, finished my day yesterday w/ a delicious tuna + mozzarella cabbage wrap, yummy!
oo + a little home made pud

3 tsp cream cheese, slightly softened in the microwave
a little sweetner of choice (I used stevia drops)
1/2 tsp cocoa - all mixed up in a cup.. creamy, deliciousness mmmmmm

so yeah!
I found a really great green pesto at aldi, 79p! + minimal carbs for 1/2 a whole jar like.. 1..5g carb or something.
(will have to double check that, but when I checked in the supermarket it struck me @ how low in carbs it was) + so far i've just been having tsp-tbsp amounts. There's no sugar or starch fillers in the ingredients either, which you find in many of the others.

Had a lovely lovely day today, I was celebrating my boyfriends birthday with him + i've had a blast..
also tried some more amazing foods!!

B- 1/2 avacado
smoked salmon
scrambled egg w/ drop of unsweetened soy, sprinkle of cheddar + a little chopped red pepper
handful spinach

coffee w/ soy milk + tsp cream

first real time i've tried egg + smoked salmon + needless to say i loved it!!

snack - the smallest bag of pork crackling... from the 99p store, anyone else bought these before? come in multibags of 6. I kinda like the smaller portioning, you can't get carried away!

L- slice of ham + cheese wrapped in a cabbage leaf
then I shared a salad w/ my other half that consisted of-
spinach, shredded cheese, few tsp of the amazing green pesto I mentioned before + a couple of chicken drumsticks each

D-chicken, prawn + egg faux fried rice
(w/shredded cabbage, diced green pepper, garlic, ginger + 1/4 of an onion)

This was incredible, if you haven't made it yet I highly recommend it, just google for a recipe + improv from there! tasted just like fried rice from a Chinese restaurant, but it's essentially just a bowl of veg haha! However it does take a lot of prep time! esp. as I didn't have a food processor to grate up all the cauliflower...

then my boyfriend + flatmates ate some birthday cake + I joined in with the celebrations by tucking into my sugar free raspberry jelly pot w/ a bit of squirty cream on top for good measure ;)

Been taking some serious food porn photos too, I'll upload them as soon as I get the time, so excited to show everyone my creations haha :D I am loving the foods that I get on this LCHF woe, hope everyone else has enjoyed their day + their meals as much as me :D

hey guys, yesterday was another exciting day as I decided to try yet some more new things.. nuts! don't know if I will regret that later. back in the day I had a bizarre phobia of nuts + they just did not appeal to me, avoided them like the plague. But yesterday I tried walnuts.. ended up eating about 40g I reckon, they are great but SO calorie dense! my god. Also tried peanut butter (natural, no added sugar) + I seriously love it! Gonna have to watch out that I don't have it to often, eating it from the jar (a la yesterday :eek: )

okay so yesterdays food diary -

B - coffee w/ soy milk + tsp cream
ham + gouda wrap up, mushroom stuffed w/ tsp pesto + topped w/ mozarella + cheddar, handful spinach + a baked egg in a ham cup,

they look so cute + they're pretty quick to make, throw in the oven with minimal washing for mornings on the run :) shame I overcooked mine!

S- 1/2 small bag of pork crackling shared w/ boyfriend

L- ate out w/ my boyfriend at wetherspoons :D
got the 8oz rump steak with side salad + extra veg
made my own sauce by mixing mayo w/ 1/2 sachet of french mustard -lovely

glad I avoided sugary tomato sauce, which I used to be addicted to!

S- 40g walnuts, probably about 3 tbsp peanut butter :rolleyes: some mattessons smoked garlic sausage

D-a roast chicken thigh on a bed of cabbage + bacon, shredded + sautéed in butter.
w/ home made low carb gravy!

for the gravy I made up a beef stock cube, added herbs, tsp butter, juices from the roasting pan + thickened it up by reducing it + gradually adding around a tsp of xanthan gum.

I was a little hesitant to try it but in the end I thought it tasted great + my boyfriend loved it, he wanted to lick the plate, but stopped himself + ate the remainder of gravy with a teaspoon instead haha! :p

I finished up the day with a couple tbsps of squirty cream + a little taster of the low carb pudding mixture I have been cooking up for today.. (I'll show you guys later!)

Feel abit guilty eating lately, especially until I get to log it and write it down, which helps put things into perspective. I think yesterday I did go overboard, feel like I was munching the whole day. Gonna reign it in today!
 
Sounds like you are enjoying the new freedom with Atkins. I did VLCD too, am thankful for it lost loads but there comes a time when you need to start eating again and testing the waters of eating & not gaining.

What are you studying?

I really hope I am not over eating lately, seem to be having the munchies

Saturdays food was-

B/L- left overs.
1 roast chicken thigh, small portion of faux-fried-rice


D-stuffed peppers with beef mince bolognese, topped with cheese
w/ a side of roasted cauliflower and brocolli

S-home made low carb pudding
peanut butter cocoa trifle
that consisited of -
a layer of peanut butter, a layer of choc mouse (made with gelatin), topped with squirty cream

+ then later on .. 1 and a half frankfurters
+ way too much peanut butter :cry:


today hasn't been a good day either really

B- 3 x bacon, 2x egg, coffee w/ cream

L- didn't really have lunch as such, was out so had to grab snacks.. ended up eating:
pork crackling
macadamia nuts
cheese triangle
cashew nuts (no nutrition label, only checked the carb count when I got in, :eek: was horrified!)

Since I got home I've had no proper dinner
instead I had a few cherry tomatoes and a couple of baby bells .. s/f jelly w/ cream... feeling like I have failed. I am going to plan the next weeks meals to motivate me + keep on track.. I don't think I can justify all the snacking I am doing, perhaps if I ate proper meals, at proper times I would be able to avoid it.
 
Ah... you're only just settling into it - you've had a lifetime of never having to do this before, so it's bound to be a learning experience for a while yet. :)

Don't underestimate the massive change and stress that starting Uni is, even without this sort of thing on top! No reason at all to be beating yourself up yet. You've got the nonce to realise what's happening and recognise the solutions, which is more than half the battle. Going on your past achievements, I know you'll get to grips with this too...

Hello! OMG those ham cups sounds delightful! I was going to go and make some just now in preperation for tomorrows breakie, but I just realized I have no ham, and not enough eggs! lol! Oh well, sounded like a good idea tho! If I remember I'll buy some tomorrow after work!

Oh, and I know this is a bit late (been awol for a week or two) but holland and barrett precision enginnering cookies and cream protein shake is delish! 1.5g carbs per scoop too! :)
 
Hello MM... Don't worry ... Draw a line and start afresh tomorrow .. It really helps if you plan, otherwise you'll grab stuff cos you're too hungry...

Try and stick to clean and green - particularly in the first few weeks and also have lots of water...

today was an improvement, barely snacked at all, think you're right alpaca, looks like you didn't finish your post though :s ?

B- smoked salmon + a 2 egg cheese omelette, tsp green pesto, coffee with cream
L- chicken salad (crunchy mixed lettuce, half green pepper + 2 cherry toms)
with a mustard mayo dressing, a tsp of hummus + tsp tahini
D- steak + courgette 'chips' fried in goose fat.. (would you guess..... 1st time trying courgette! loved it again :rolleyes: )

S-small bag of pork crackling

feeling a little peckish at the moment, but I think I'm going to make myself a big cup of peppermint tea before bed instead of eating anything more, don't want to ruin my appetite for breakfast tomorrow, (bacon + eggs I reckon.. not very original but yummy none the less!)

oo thanks for the heads up on the cookies + cream, have you tried any other flavours? Also let me know what you make of the ham cup, I did enjoy mine but badly over cooked it, so if you like it runny, i'd say check up on it after 8 mins instead of 12, see what it's like from there :)

thanks for your kind words, I hope you're right! I think it wasn't stress so much as a fascination with all the new foods I had never tried, combined with a new attitude towards food in general - that meant I was snacking on lots of different things rather than having meals, working on it though. Plus I bought myself some kitchen scales the other day so I can help myself portion control some foods properly (eg. nuts, which I find just too easy to scoff on!)

today's food was as follows

B- coffee + cream
3 rashers Bacon, 2 egg, 2 cherry tom + cheese omelette, cheese triangle, 20g walnuts

L- leftovers! small beef salad (lettuce, 2 cherry toms + 1/2 a green bell pepper) tsp hummus, tsp tahini
w/ 2 slice edam + few slices wafer thin chicken

S- 1.5 tbsp almond butter, 3 slices salami

D- red thai beef curry w/ shiritaki noodles + asparagus (yum!)
followed by a s/f jelly pud w/ squirt of cream

Also I managed to email myself all the pictures of the amazing meals I've been cooking up, so get a load of these beauties!
