Snacks mini sw quiches

Just made these so I thought Id share...tottally free...courgettes, red pepper, onion, mushrooms, coriander, mixed herbs and 3eggs. I just poured them straight into a cupcake tin. I much prefer them to the big sw quiche made with cottage cheese/quark

Can you give me a rough idea of the quantities you used? These look really nice but I'm a terrible cook so I don't have a clue where to start!

Gave them a go and they were yummy!! Going to take them to taster session tomorrow I think so thank you so much, I was really struggling for ideas! I only made a small batch to try them out, couple of eggs, few mushrooms, small red pepper, some onion and pinch of mixed herbs. Going to make a few different kinds for tomorrow.

My mum make hers like this but lines the muffin tins with wafer thin ham - totaly lush
