My boyfriend always makes this and is totally delicious! :)

• Fry light
• 1 onion, peeled and chopped
• 5 whole garlic cloves, peeled
• 2 carrots, peeled and chopped
• 1-2tbsp plain flour (1 syn)
• 1tbsp medium curry powder (or more to taste)
• 600ml chicken Bovril stock
• 2tsp honey (1 syn)
• 1tbsp soy sauce
• 1 bay leaf
• ½tsp garam masala
• Quorn chicken escallops or sometimes I use quorn chicken burgers

1. Fry the onion and garlic for few mins, then throw in the carrot pieces and cook slowly for 10 mins, with the lid on giving the odd stir occasionally. You want to sweat the vegetables until softened and starting to caramelise.
2. Stir in the flour and curry powder and cook them for a min. Slowly pour in the chicken stock bit by bit until combined (do it slowly to avoid getting lumps). Add the honey, soy and bay leaf then bring to the boil.
3. Reduce the heat to a slow simmer and cook for 20 mins. The sauce will have thickened although you still need it to have a pouring consistency. Add the garam masala, salt and pepper, then pass the sauce through a sieve. I like mine chunky so add the veg back into the sauce after sieving.
4. As I do RED/GREEN I mix the sauce into rice and have it with the quorn escallop but guess on EE you could have it with actual chicken! And I often have it with green veg.
 
Wow that sounds soooo yummy. Might have a go at the weekend. I love the wagamamas chicken Katsu but I bet that's more than 3 syns! Does that normally serve 2?

It is and tastes just the same, good when you're craving something more syn-ful! Yeah serves 2, we've made it for friends before and stretch to 4 but were slightly smaller portions. X

Wednesday - was going to be RED but had to go for drinks with clients so had a quick easy dinner when I got in at 10 last night. So was kind of a red/free day!

Bit cross I went over my syns as usually try to 'save' them for Saturday but hey ho - 1.5 over not by much!
