Slow Cooker Ratatouille (with syn free option)

Morning you lovely lot. Have decided to climb back aboard the SW express. Starting as I mean to go on by chucking a ratatouille in the slow cooker. It's utterly gorgeous and almost entirely superfree!

Destructions:
Chop up one onion, one aubergine, one courgette, one bell pepper (I like orange the best but it's your choice!) and chuck them in the slow cooker with two tins of chopped tommies, 1tbsp balsamic vinegar, salt to taste and a whole load of dried mixed herbs and thyme.

I actually like to fry the onion first in 1tbsp olive oil, this is 6 syns BUT will go between 4-6 servings. It's not necessary but I feel it makes a difference to the flavour and is worth the 1-1.5 syns per serving, but obviously it's up to you...

Mix it up and cook on the LOW setting for around six hours.

I love this served over quinoa for a really satisfying dish but reckon it'd be equally tasty with rice or pasta.
