It's so tasty! Here's a photo from the last time I made it, served with mixed leaves and balsamic vinegar: <img src="http://www.minimins.com/attachment.php?attachmentid=146172"/> I also think I used orange peppers as I'd run out of red lol! Also, the sweet chilli cottage cheese is definitely free. I couldn't quite believe it myself so I've checked it on the website numerous times lol. It's perfect for this risotto - it makes it totally Syn free, but nice and creamy too. Yum!

Than you so much. I have a feeling I will have a very happy boyfriend when I make that ;)
 
Is it risotto day or something!? You, Lil and Sarah are all having it for dins! And seriously tempting me to go and get some arborio rice! So so glad your new group went well! I'm glad you have taken this step! I think it could be the switch in you that you've been trying to turn on for awhile! I wouldn't worry about being one of the younger people there, I feel like I've been that at all 3 groups I've gone to but I definitely don't even remember that there's like 15 years between me and some of the people I'm closest to there! xxx
 
Yay lovin the update this morning.

I've used mapmywalk & it's fab it gives you a breakdown of how far you've walked, time per distance, cals used etc, it even sends you an email with how far you've walked in a week (check your settings).

Have you googled walks in ...... you'll find lots of places near to home you never new about, we found the moors were only 10 mins drive away from where we live & it's fab up there. x
 
I always put low low in my risottos but will definitely try some cottage cheese now!

That is so true - we're all feeling the risotto rythym today ;) I'm so excited for it, I have to admit! Was meant to have it last night, but indecisive old me changed my mind, so my taste buds have been tingling for two full days now!

I definitely feel as though going and rejoining a new group as a new member was the right thing to do. I've said it loads already today, but I've not had this motivation / excitement for SW for quite some time now. I think it's just what I needed! The oldies are lovely too, a lot of them were quite funny! The only thing I didn't like is that I ended up sitting next to two ladies who just chatted the whole way through Image Therapy. I can't stand that, it's so incredibly rude. At one point I literally couldn't hear anything that anyone from the other side of the horseshoe was saying. I think I'd avoid sitting near to them in future. But other than that, all good! xxx

Thanks Michelle, thats a great tip. There's a lovely walk where we live. It's called the Great Aycliffe Way, and it's a 5.5 mile walk which goes around the countryside of the town. Many of which, as you say, you'd not even know was there! I've done that a couple of times now but I don't think my mam ever has, so I may have to introduce her to that one at some point! xx

I always used Low Low in my risottos too - but this really is a fab alternative! The sweet chilli gives it a nice sweetness along with the peppers, but also a bit of a kick. I love it!

My friend / colleague from work has moved into a different team / office today and as a little leaving present she had this made for me, to help keep me going with Slimming World. It couldn't have come at a more perfect time!

I've actually wanted one of these for ages, but have never seen one as nice as this! I'd never mentioned I wanted one either, she obviously just knows me really well. It's so pink and pretty!

Map my walk is great! I use it if I go out walking. I always go with my cousin and we were laughing about It because the woman on the app talks every so often on her iPhone so we were saying things like surely we've done another mile when's she gonna speak!!! Lol it's a good motivator. I wouldn't pay too much attention to the calories burnt bit, all of those apps like the map my run one and the fitness pal are so inaccurate with the cals I've noticed since I bought my heart rate monitor! X

Loved the app, it's brill. We did 4.34 miles in 1 hour and 2 minutes lol, which I didn't think was bad at all for the first bit of Body Magic I've done in months!

Oh I don't take any notice of calories burnt anyway - SW isn't about calorie counting so why should I :)

Hoping that the weather will stay nice as were hoping to go for another walk on Saturday morning xx

Good morning lovely Mini's friends. Happy hump day - Wednesday already! :D

Feeling great this morning - so much less bloated and actually feel like I have more energy too, even though I didn't have the best sleep last night. I think the comination of eating good food teamed with that lovely bit of Body Magic last night is really having an effect!

I've got such a yummy day of eats planned - including leftover risotto for lunch today. Well, I'm calling it risotto. Don't know if I posted this last night, but when I came to make it I realised we'd run out of risotto rice! I was starving so didn't really want to go to Tesco for more, so I just used some dried long grain rice that was in the cupboard instead lol! It wasn't quite the same, as the long grain rice doesn't tend to bulk out as much as risotto rice, but it was still tasty! I ended up making a huge pan full of it, as the chicken breast I had was particularly large too, hence the leftovers for lunch today!

I feel like I'm actually really enjoying Extra Easy days again. I know yesterday was the first one I've done for a while, but it was good. I didn't feel like I missed the double HEx's that I'd get with Red / Green days at all. In fact, I probably enjoyed them more than normal as I appreciated them more just having the one.

Feeling very positive and I'm already looking forward to group again on Monday!

It is SO yummy, and totally Syn free too! I absolutely love stodgey, filling food :)

I agree, you can't beat a bit of stodge. And the fact that it's syn free makes it all the more delicious!
 
Love the sound of that risotto....may have to try it!

Believe it or not, it started out as a total experiment. I chucked a few ingredients that I had lingering in the cupboard / fridge in a pan and that's what I got. It's now a firm favourite!
