Day 4: Tuesday 04 September 2012
Breakfast: Magic Pancakes, 1x Banana, Strawberry & Syn Free Lemon Curd, 1x Lemon Juice and Sugar (1) Hot water & Lemon

Lunch:
2x ryvita, crabsticks, homemade coleslaw (1syn per portion), sweetcorn, toms, cucumber

Chicken breasts (I used 4, and that gave 3 of us loads each) chopped into strips.
2 onions, sliced so they made nice circles
4-5 cloves of finely chopped/minced garlic
a bunch of spring onions topped, tails, and chopped into small bits.
3-4 green or red chillis (I used 4 finger chillis which are rated hot, if you dont like very spicy stuff, drop down to a medium heat variety)
a green pepper (I didnt have a green one so I used a yellow one instead) chopped into small chunks.
sea salt
black pepper

Liberally frylight a wok or large frying pan and heat up.
Add onions and green pepper to pan, and fry over a medium heat so they soften up nicely.
Add garlic, spring onions, chillis to pan and fry for a further minute or so.
Add chicken strips.
Throw several large pinches of sea salt and pepper over the chicken.
Fry the whole bally lot together, stirring repeatedly until the chicken is cooked through.
Serve with a side salad of superfree for red days, or with boiled rice or even SW chips for an EE day.

Vixter's Magic Pancakes!!! Delish!

Magic Pancakes

35g Porridge Oats (HEB) or 1 sachet of Oats So Simple
1 syn free yogurt such as Muller Light (I used the ltd edition Mint & Choc cos I don't like them much)

1.
Mix the Oats and Porridge well and leave in fridge overnight
2. In the morning beat 2 eggs and add to magic mix stirring thoroughly (you can add sweetner but I didnt bother)
3. Right, I tried frylighting them it was a nightmare so...

4. Take a bowl and pour half the mix into the bowl, microwave for 1 min, then micro again for about 30 seconds til set, leave for a min or so to cool

5. gently ease from bowl by moving with spatula then tipping onto a plate

Pancake 1.Banana, Strawberries and Syn Free Lemon Curd

Pancake 2. Lemon Juice, roll and sprinkle with one tsp (1syn) of sugar

Donna's Homemade Coleslaw

Coleslaw: 1 coleslaw mix from Asda (carrot, white cabbage), half red onion finely chopped, 1 stick of celery finely chopped, 14g sultanas (2syns), fat free nat yog, 2 tbsp extra low mayo (2syns), salt and pepper - mix well and then leave in fridge for sweetness of sultanas to kick in

Ooooo pj day nice! Hope work was ok. Both today and yesterday has been chaotic at work, filled my diary up for today thinking no doubt a couple wouldn't come in and they all did!! X

Well as long as mini mins was involved :) its amazing how quickly it seems like you've never been off doesn't it!

I'm a recovery practitioner in a drugs service. How bout u? X

Dinner: Crusty Salmon fillets with rice and salad

HEA: 50g philly x light

HEB: 4x Ryvitas
Syns: Coleslaw (1) = 1/15
 
Crusted Salmon Fillets (Philadelphia recipe)


  • 50 g sliced white bread (I USED TESCO EVERYDAY INSTANT MASH POTATO)
  • zest of 1 lemon
  • a few fresh chives, chopped (DIDN'T BOTHER)
  • 4 salmon fillets
  • 100 g Philadelphia Light with Garlic & Herbs
Pre-heat oven to 180°C, 350°F, Gas Mark 4.
(Place the bread in a food processor and blend into fine breadcrumbs)
Mix instant smah and lemon zest
Spread the salmon fillets with a thick layer of Philly and place on a lightly oiled baking tray.
Top with the flavoured breadcrumbs, lightly pressing them into the Philadelphia.
Roast in the oven for 20 - 25 minutes or until cooked.
