Im baaaack! With Ooopsie roll recipe (lifesaver!)

Just tried these with an electric hand whisk and for the life of me I can't get the egg white texture right!

Maybe I'm doing it wrong? I'm whisking until the handle turns hot, their frothy on the top but liquid underneath!

Aaargh!

Mine just kinda filled the tray....so I have a nice looking flatbread for sandwiches I suppose....

the whites should be stiff but after they are whisked add the yolks and cheese and mix carefully :) they are quite soggy but go nice in george forman with some cheese :D
 
Are they better than MiMs? Have never made them, and this thread isn't exactly enticing me to!
 
They are very different to mims, I have not made them for a while but really enjoyed mine today, almost like a sandwich (almost) :D
