Creamy Quorn & Bacon pasta salad

Creamy Quorn & Bacon Pasta salad
Core
Serves 2

2 quorn fillets cooked and chopped
2 slices of Quorn bacon cooked and chopped
2 Tomatoes chopped
80g pasta (any type)
2 tablespoons low fat yoghurt
1/2 - 1 teaspoon Dijon mustard
Salt
Pepper

1. Cook pasta
2. Add chopped quorn and bacon to pasta with tomatoes, stir well.
3. Mix together yoghurt, mustard, salt and pepper
4. Add dressing to pasta, mix well and serve.

Great as a packed lunch.

Could easily be made with chicken and bacon.

60g dried weight pasta

2 litres of water
Exercise: none
S - gonna treat myself to a small box (kids size) of popcorn at cinema tonight with a bottle of water - 4 points.
 
Glad that despite a small gain, you're still enjoying Core. I think I'll give it a go in a fortnight's time. Can't do next week as it's lo's birthday and I know I'll cope better on points.

I'm looking forward to making monster cookies!
 
Saraian - I think the pasta works out to 2 1/2 points for the whole receipe which isn't bad. Hope you like it.

L - homemade lemon & coriander hummus
Homemade oat cakes
Cucumber
Banana
Yoghurt
D - homemeade quorn & mushroom stroganoff
Tagliatelle
Tapioca pudding (so happy to find out tapioca is Core yippee)
S - 1 ryvita muesli crunch slice before gym

2 litres of water

Exercise: 1 1/2 hrs in the gym doing cardio and resistence/strength training.

So happy to be back in the gym, did 1 hr 20 mins yesterday, swam Saturday. Feel happier now I can do some exercise BUT Ive just joined the local council gym and it looks like they will be closed Wednesday & Thursday for the strike, can't complain though am a council worker myself.

Wow your menus always sound so yummy! .. I just wish i was as creative! .. Im scared of food i think and stick to what i know lol ..

I wish I was more scared of food lol. I'm allergic to cooking right now though - it's too hot. Love your recipes though and will use them *ahem* sometime.

Thanks everyone, I definintely 100% won't be giving up, even if it takes me 2 years to lose the weight, I'm quite a determined person at heart! H ad a good weekend, was able to start back in the gym. Got a new gym now, so was trying to familarise myself with the gym and see whats what, they have kettlebells there so think I will give them a try, have been looking up a few exercises on the internet. Did 1 hour 45 mins in the gym today, 55 mins cardio and 50 mins weights/resistence training concentrating on upper body and abs, will do lower body and abs tomorrow.

Hope everyone is doing well. Will post some of the receipes later hopefully.
 
Quorn & Mushroom stroganoff

Quorn & Mushroom stroganoff

Serves 4 - CORE

1 pack of quorn pieces
1 onion finely chopped
1 can Cambells low fat condensed mushroom soup
3/4 cup of vegetable stock
Small punnet of mushrooms chopped
1 tablespoon tomato puree
1/4 plain low fat yoghurt
Chopped fresh parsley (or 1 teaspoon dried)
Salt
Pepper
1 tablespoon olive oil (from daily allowance)

1. Sprinkle quorn with black pepper
2. Heat oil in a wok or large saucepan add onions and cook until tender and starting to brown, add quorn and cook for 3 mins more.
3. Add mushrooms and cook for 2 mins
4. Stir in soup, stock, tomato puree.
5. Heat to a boil, then simmer for a couple of mins.
6. Take off heat and add yoghurt.
7. Serve sprinkled with parsley.

Good over brown rice, egg noodles or tagliatelle.
 
Lemon & Coriander Hummus

Lemon & Coriander Hummus

Serves 4
CORE or 2 1/2 points per serving

1/2 teaspoon coriander seeds
Large tin chickpeas (reserve 2 tablespoons of liquid)
1 large garlic clove crushed
Grated rind of 1 lemon plus 1 tablespoon of juice
1 tablespoon fat free fromage frais
1 tablespoon fresh coriander roughly chopped
2 teaspoons of olive oil

1. Place coriander seeds in a pan and heat for two mins (be careful not to burn them.
2. Tip out of pan allow to cool and crush to a powder
3. Place chickpeas, ground coriander, garlic, lemon zest and juice, framage frais and 2 tablespoons of reserved liquid in a blender/food processor and whizz to a rough paste.
4. Add fresh coriander and whizz again.

Will keep for 2 days in the fridge.

Great with homemade oat cakes or ryvita.

I had this today for lunch and its lovely will be a regular on my menus, had it with oat cakes and cucumber.

80g medium oatmeal
10 sprays frylight
3-5 tablespoons of water
Large pinch of salt.

1. Heat oven to 190 degrees
2. Put oatmeal and salt in a bowl and spray with Frylight.
3. Add 3 tablespoons of water (you may need to add more).
4. You need to achieve a dough like consistency. Roll out the dough until its the size of a salad plate (around 8" in diameter).
5. Trim the rough looking edges off and cut the circle into 8 triangles.
6. Transfer to a sprayed baking sheet.
7. Bake for 15-20 mins until dry and crisp, don't let them burn.

Not sure how long these keep but reckon it must be at least a week.

They were really lovely.

I know I couldn't believe how easy they were!
 
Monster Cookie
Serves 1.

I was thinking. The cookie recipe which is sounding like a winner....if you made up 5X all the dry ingredients and put into an airtight box you could just weigh out a 5th when needed, then add the apple sauce.

Would save time getting out all the ingredients, weighing them all separately each time

Just a thought :)
 
see when you say monster cookie im thinking of the big ones that tescos do with all the choc and choc chips! drooling!lmao
 
Ooh that's a good idea KD! Think I will start doing that then it will only take 5 minutes to mix and 15 minutes to cook up.
