This Little Piggy Goes to Atkins

Day 8 shredded, have made the Courgette cake from Low Carb Gourmet. It smells gorgeous, just like carrot cake. Will try some later and report back.

Snow not expected until this evening here, but then we are akso expecting lots on Sunday too. We love it, so cannot wait to get some. However, husband starts nights tonight so it might not be much fun for him if he has to walk home in the morning!

Not much more to report I'm afraid, it's been a rather dull couple of days although it's been lovely to be at home with DH. We have done alot of dog walking, which has been really lovely.

Courgette cake is lovely, moist, cinnamon taste. Had just a piece, but it was enough. It's the best low carb cake I've made yet.

No carb or calorie count as too lazy to enter it into mfp.

Yay! I'm glad you like it :D and just think, if you have kids you're secretly getting vegetables into them haha!

It's interesting that you've put all the frosting inside the cake, makes it look a little Victoria sponge-esk!

I want to eat some cake now! Did you use granulated splenda or splenda mini's? I've only made it with granulated, but I'd like to try it with mini's to cut the carbs down some more.

I made it with gran splenda, but next time will do half with liquid hermasetas and half splenda. I didn't put frosting on top as I only had enough cream cheese for half the quantity. I don't think it needed it on top as well.
 
Day 9 shredded, dog walked in all the snow. She was trying out her snow pawz for the first time. It helped out alot with stopping the snow from balling under her paws so much.

Am making ml's Swiss pancakes for lunch, I can't wait!
 
The Swiss pancakes are absolutely my new favourite things. Here are a few things I learned about them:

If you whisk your egg whites in advance (because you realised you don't have any cream cheese) they will not be whisked when you go to use them 3 hours later. However, they will whisk back up to stiff peaks.

If you want the mixture to fit my baking tray you'll need to double the mixture at the last minute. When done, cut into 8 and keep 4 for tomorrow.

When serving ensure you put unsalted butter on the gorgeous pancakes, as salted is too salty and detracts from their lovely flavour.

Also made a sticky cheese and onion crustless tart

LOL on the eggs whites - but they sound scrummy, I am trying them tomorrow!

And that tart looks amazing! You know what I'm going to say now - recipe please :D

By the by, I found this recipe for a flax crust - haven't tried it yet, might give it a whirl tomorrow

Heat oven to 375
Melt 6T of butter (can use coconut oil for part of this)
3/4 cup of flaxmeal, put in bowl
Add 3/4 cup of almond meal to flaxmeal
Add a pinch of salt and a bit of sweetener (I use about 1/4 cup sugar equivalent)
Mix it all together and press into springform pan. Bake 7 or 8 minutes.

[h=2]Flax Meal Crust Quiche w/ Turkey Bacon, Broccoli, Bell Pepper, and Cheddar[/h]
For the crust:


  • 1.5 cups ground flax meal
  • 3/4 cup grated parmigiano reggiano cheese (or plain parmesan works fine)
  • 2 eggs
For the filling:

  • 6 eggs, beaten
  • 1/4 cup skim milk
  • 1 cup shredded low fat cheddar cheese
  • half a bell pepper, diced
  • 1/2 cup chopped broccoli
  • salt & pepper to taste
  • 4 slices cooked turkey bacon, chopped

Directions:


  • Preheat oven to 350 degrees
  • combine all ingredients for crust
  • press crust dough into bottom of a pie pan or quiche dish and mold into a flat crust
  • pre-bake for 8-10 minutes
  • Combine all quiche filling ingredients leaving out 1/4 cup of the cheese
  • Fill par-baked crust with filling and sprinkle the top with remaining cheese
  • Bake for 35-40 minutes until cooked through

Lovely, thanks for that. The cheese & onion quiche was lovely for tea, with cauli patties rolled in crushed pork scratchings. Next time I do the quiche I'll use 4 eggs, without a base it needs to be slightly firmer.
