Sausage on a mission - veggie green days diary

Thank you Beegee!! That's a valid point!! My main supermarkets are Sainsbury's and Tesco. Morrisons and Asda are about a 30 minute drive :( unfortunately!! I'll see if Sainsbury's or Tesco do the tins that are free!! I'm going to make a curry tonight and the Dahl loaf!!

Smartie - the spicy stew is just a "throw everything in a pot" recipe, so should be a pretty difficult to screw up. It is a bit like the speedy soup, but without the soup.


4 x quorn sausages
frylight
an onion (any colour. I used red)
a courgette or two
a bell pepper
handful of mushrooms
handful of frozen sweetcorn
passata - approx 650g
tin of mixed beans (drained)
tin of baked beans
spices - I like it spicy so used 2 dsp of cajun seasoning (mum gave me it from a bucket she bought in Costco and she says it is just spices so syn free).
Alternatively, you could make it Italiany by adding a couple of spag bol oxo cubes and some herbs.


Frylight the sausages then chop them up. 6 pieces per sausage.

Meanwhile, chop the veg into chunks about 2cm square.
Start off the onion in frylight in a big pot.
Add everything else including sausage bits. It is cooked when it is no longer raw :p

Serve with a handful of wholewheat penne pasta and plastic cheese.

Breakfast:

porridge made with milk (hexB and hexA),
banana, strawberries, blueberries

Lunch:
jalapeno houmous and 3 krisprolls (hexB)

Dinner:
herby roast veg,
mash,
3 x Cauldron sausages (1.5 syns)
Nandos sauce (2 syns)

Snacks:
pineapple, melon, strawberries,
3 x light babybels (hexA)
Dairylee dunkers (6 syns)

Total syns: 9.5
Fluids: good
Exercise: 4km on crosstrainer

Saturday 6th August

Brunch:
3 krisprolls with cottage cheese, plum jam and walnuts (2 x hexB + 2 syns)

Dinner:
herby roast veg,
quorn peppered steak,
harissa yoghurt

Snacks:
milk for coffees (hexA)
half bottle of red wine (13 syns)
melon

Total syns: 15
Fluids: good
Exercise: swimming

Weigh in this morning: Lost 5 pounds and regained my long lost four stone sticky.
