Jenny's Core Diary - Back and with a new target!

Potato salad sounds lush - what brand was the honey and mustard dressing?
 
It was a tesco healthy living one - I noticed on the side it said 0 points, so I was happy about that!

I was stuffed after the potato salad yesterday - got a tuna and pasta version today.
 
Well done, Core is clearly really working for you, keep up the good work, your food sounds great and healthy!
 
I can't remember when the last time I updated this was, but to summarise, i got a bit carried away scoffing extra points, but still managed a 3lbs loss this week and it's made me even more determined to follow the plan 100% now.

Today's menu is:

B: Monster Cookie
L: Salad with ham, eggs, lettuce, cucumber, cherry tomatoes, and a bit of light mayo + Banana
S: Apple
D: Spal Bol (home made with extra mushrooms & served with a side salad)

I'm also upping the training for my 10k race, so that should hopefully have a positive effect too - I'm already feeling better when out running, so it's obviously doing something!
 
Today I am stuffed after my lunch!!

B: Pain aux Raisin - 7 points (all saved up and well spent for a little treat!)
L: Pasta Salad (wholewheat pasta, ham, peppers, cherry tomatoes, carrot, cucumber and honey & mustard dressing) + Apple
D: Spag Bol - the rest of what I made last night, which turned out absolutely delicious, even though I followed the same good recipe I usually use it turned out especially good this time!!
 
Jenny, you're doing really well. Great losses, and your menus look lovely too.

Wish I could do Core but I'm such a grazer, I don't think I could stick to three meals a day!

I'm not very well organised either and I don't think I'd be very good at taking packed lunches - what do you do, Jenny?
 
I make my packed lunches the night before while i'm in the kitchen cooking my dinner - it's the only way I remember to do it. I find using leftovers like pasta, or new potatoes from the dinner i'm making also makes it that bit easier to get in the habit of making packed lunches. I also find making sure I have no money in my purse means that I have to take a packed lunch or go hungry!! We haven't got a microwave at work or it'd be much easier for finding no-prep things to take to work.

B: Nothing - very badly organised today!
L: Ryvita with Extra Light Philly + Apple
S: Apple
D: Chow mein (noodles, baby corn, mange tout, onions, mushrooms & Carrots)
 
Wow you are doing fantastic, well done. How do you make your potatoe salad? My OH is German and I make it they they do in Germany but is WAY too many points,,, lol xxx
 
If i'm making a potato salad for lunch (rather than the side-dish sort) then i'll use boiled new potatoes, chopped onions, cucumber, cherry tomatoes, grated carrots, peppers, maybe some bacon or ham, and then mix it with some 0 point dressing (tesco's healthy living honey & mustard is my favourite so far), and then add some extra light mayo to make it creamy.
 
Yummy that sounds great ta!!! I think I will try that. when is your 10k? Im doing one soon too.
 
My 10k is in October, so got a bit of time left to crack on with the training, but slowly I'm getting better and I'm really noticing a difference when I'm out running.
 
Yesterday I got a bit flexible with the plan as I met a friend for lunch and we went to my favourite sushi place, then for dinner I met another friend and we went to nando's (1/2 chicken & sweet potato mash) before going off to see Wicked at the theatre (absolutey brilliant). I kept eyeing up pots of maltesers and tubs of ice-cream, but i managed to resist them all - i think if i'd have been drinking i wouldn't have been so lucky but i stuck to the diet cokes.

Today was Pea & Ham soup for lunch, bananas and strawberries for snacks, and then a huge stir-fry with noodles for dinner.
 
I do like Nando's - never had sweet potato mash though - sounds yum. Well done for resisting the lure of the sweeties at the cinema. Thank goodness for diet pepsi eh?
 
I think the pregnant friend helped me stick on the diet coke - i'm sure if she'd been drinking she would've got me drunk! My diet has a hope of lasting now one of my best mates is on the wagon!

Sweet potato mash is delicious - i'm sure the nandos one had some butter in it, but in my head it was still better than having chips or garlic bread.

Yesterday i went to a childrens party and used up my remaining points on a bit of ice-cream and some nibbles, then for dinner I ended up staying at my dad's as they were having roast chicken, which went well on the plan too.

I forgot to weigh in this morning, so i must remember to do it tomorrow instead.

B: Skinny Chai Latte (bucket of so it fills me up!)
L: Ham salad (lettuce, ham, peppers, cucumber, cherry tomatoes & carrot) + Apple
D: Cajun Chicken with steamed veg + Yoghurt
 
Sounds yum. Do you know if tinned ham is allowed on Core or does it have to be the sliced ham from the refrigerator section in the supermarket?
 
I'm not sure if tinned ham is or not - I guess it would depend on how much fat there is in it - If it's possible to cut the fat or jelly off (if it comes with it) then i see no reason why it can't be used.

I always use the sliced had and roll it up, then cut it, so i'll have lots of little rolls in there, means i can actually taste it rather than lots of thin slices!
